Nogata Gyoza
A moment to unwind in the city.
Nogata Gyoza in Nakano crafts pan-fried, shiso, and boiled gyoza made without garlic or Chinese chives, paired with a house sansho highball.
01 / ABOUT THE PLACE
Arriving at the table with crisp, delicate wings of fried batter, the pan-fried dumplings at Nogata Gyoza stand out for what is left out: neither garlic nor Chinese chives are mixed into the filling. Instead, the pork and vegetables deliver a clean, naturally sweet savory flavor that never feels heavy, making it easy to finish a generous plateful. Minced garlic is served on the side for those who wish to add it, meaning diners can drop in on a weekday lunch or after work without worrying about lingering aromas. Seasoning the dumplings with the tabletop cruets of vinegar and freshly cracked black pepper rather than the usual soy sauce and chili oil highlights the delicate taste of the filling with a refreshing finish.
Beyond the original pan-fried dumplings, the menu offers varied profiles for different moods. Herbaceous shiso dumplings provide an aromatic note, while the cheese-filled variety adds a mellow richness. Diners seeking a chewier wrapper can turn to the boiled Mala Dandan Gyoza, served in a fiery sauce and garnished with mitsuba trefoil, which can be swapped for fresh coriander upon request. The pairing of springy wrappers with the spiced sauce makes for an invigorating contrast.
Drink options feature beers alongside a house highball infused with aromatic Budo sansho pepper, which lends a bright, numbing citrus note. Side dishes like tender slow-cooked beef and pork offal stew (motsu nikomi) and house pickles suit lingering over a glass. For a complete meal, set menus pair the dumplings with steamed rice and miso soup brimming with ingredients. A smooth, creamy rare almond pudding is available to round out the dining experience.
The dining room is clean and modern, centered around large shared tables that accommodate solo diners on a quick errand as comfortably as groups of friends or families. Whether visiting for a quick lunch set or settling in for an evening of varied dumplings and drinks, Nogata Gyoza delivers a dependable, relaxed meal.
